Featured Recipe: Zucchini Bread

Hey y’all! Hope you’ve had a great weekend. I would like to start sharing favorite recipes periodically here on Palmettos and Pineapples, so today I’m sharing a zucchini bread recipe. Last week I baked zucchini bread so that my bestie and I could enjoy some at the beach this past weekend.

Zucchini bread is one of my favorite baked goods to make and eat in the summer. I try to make zucchini bread at least once each summer. Since summer is coming to a close and I hadn’t made it yet this year, it was definitely time last week. This particular zucchini bread recipe is from the kitchen of one of my mom’s friends. I vividly remember savoring this zucchini bread when my mom made it while I was growing up. When I first got into baking years ago, I definitely wanted to try my hand at this zucchini bread recipe. I was pleased with the results and it’s the only recipe I ever use for zucchini bread.

Zucchini bread recipe

Ingredients:

1 cup oil
2 cups sugar
3 eggs, well-beaten
2 cups flour
2 tsp cinnamon
1/2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 cups raw grated zucchini
3 tsp vanilla extract

Directions:

1. Mix sugar, oil, and eggs
2. Sift together flour, cinnamon, baking powder, baking soda, and salt
3. Add to egg mixture
4. Add zucchini and vanilla
5. Pour into 2 greased and floured loaf pans
6. Bake at 350 degrees for 35-40 minutes
*Be sure to let bread cool completely before removing from pan. This bread freezes well so you can eat one loaf now and freeze the other for later.

The only reason I don’t make this more often is that when I have free time in the summer, I tend to want to be out by the pool rather than inside the kitchen with a hot oven. Also, I love baking but can’t stand having to clean dishes afterwards.
Hope y’all enjoyed this post and I look forward to sharing more recipes in the future. Again, I really don’t cook a ton because I don’t like doing dishes. But I do have multiple tried and true recipes for baked goods I would love to share with y’all. And on the rare occasion that I do cook, I will share any delicious recipes I find.

    I am a fan of zucchini bread! I actually don’t like plain zucchini very much, but I will eat this yummy bread anytime! It’s kind of the consistency of pumpkin bread, but with a different flavor. Great for breakfast! 🙂
